WHAT I EAT IN A DAY WORKING FROM HOME
Hey babes💕 Today, I’m gonna share with you what I would eat on a typical day right now. Since a few colleagues have been tested positive for Covid, our office has been shut down for the past few weeks and I’ve been working from home.😷

I LOVE this!😍 I’ve literally had the exact same breakfast for the last three weeks or so😁 I found the greatest vegan coconut joghurt at my grocery store and I’ve been loving it for breakfast with some basic granola, banana and strawberries🤩 Also, a morning coffee became a must for me over the last year🙈 I haven’t really drunk coffee on a regular basis before but I’ve started liking morning coffees when spending the summer in lockdown at my parents’ place and luckily, my furnished apartment here in Stockholm had a Nespresso coffee machine in its kitchen😊

During my lunch break from work, I prefer some light food, so I often cut and mix up some salad😊 Last week, I mixed some squished avocado, olive oil, and fresh lemon with the salad and added cucumber, paprika and carrots😁 It’s always a very quick, easy, and yummy lunch😍

To fill my empty stomach after a long day of work, I like quite substantial dinners. I try to have vegetables and some source of protein with every meal. The salmon is so yummy here in Sweden, so I’ve made some rice bowls with salmon and different kind of vegetables quite often😊 I just marinade the fish with some olive oil, salt, pepper, fresh lemon, and throw it in the pan to get it crispy😊

To wind down, I like to end the day with a cup of tea😊 Lately, I’ve been drinking the pukka night time tea which contains organic oat flower, chamomile, lavender, and lime flower😍 It really calms me down and I can easily fall asleep😴

MY DIET
Hey babes! This blog post is kind of an introduction to the nutrition category of my blog. You will learn about my eating habits and how my nutritional awareness has changed over time.
First of all, I don’t follow any strict diet and I never have. I seem to be blessed with a good metabolism, but I’ve also become a quite conscious eater over the last few years.

I’ve never been a steak or meat fan in general and with gaining more knowledge about the effects of the animal food industry on environmental issues and the situation with factory farming, my consumption of meat has further decreased. I don’t forbid myself to eat anything when I feel like it but the more I learned about nutrition the less I felt craved junk food, or animal-based or wheat products.
About a year and a half ago, I started having oatmeal for breakfast and that’s been my favorite ever since. I like to use bananas as a nutritional basis and switch it up with different berries, so it won’t get boring. The oats and fruits always keep me satisfied for a few hours.

When the weather is as hot as it is right now, my favorite choice of lunch are smoothie bowls. They’re cold, nourishing, and super quick and easy to make. I will post my favorite bowl recipes very soon! For dinner I prefer very light food like salads or dark rye bread sandwiches, so I’m not that eaten up when I go to bed.
